Guacamole

The Best Guacamole–Ever!

There are hundreds of recipes for guacamole ranging from the bland         to the spicy. This recipe from my daughter, Jaime, is the best guacamole I’ve ever eaten. Serve with tortilla chips, on the side of a combination plate or enchilada platter, or as a topping on tacos, burgers, chicken, fajitas, or quesadillas.

4 ripe avocados
1 small tomato, peeled, seeded, diced, and drained
1/4 cup finely diced onion
1 tsp. garlic salt
1 tsp. cumin
1 tsp. fajita seasoning
Juice of 1/2 lime
Salt to taste

Cut the avocados in half. Twist to remove from the pit. Scoop out      the pulp and place it in a medium-size bowl.

Mash the avocados with a fork so that the mixture is a bit chunky.

Add the tomato, onion, garlic salt, cumin, fajita seasoning, and lime juice. Mix thoroughly. Taste and add salt and more seasonings if necessary.

Serves 8
